Allah Almighty made man the best of creation. And created countless blessings for him. Then He settled man in different regions. Then He arranged food for him according to the seasons of those regions. He included meat in the diet of those living in deserts and mountains and vegetables were produced for those living in plains.
Pickled meat was a part of the diet of those living in mountains.
When the Mughals entered the subcontinent from Afghanistan and established their rule in India – they brought their food and their recipes with them. Similarly, pickled meat also became an adornment of the royal table. Before today, no one would have heard of it. Nor would it have been eaten. It is unique among all foods because of its unique taste.
اللہ تعالی نے انسان کو اشرف المخلوقات بنایا۔ اور اس کے لیے بے شمار نعمتیں پیدا کیں ۔ پھر انسان کو مختلف علاقوں میں بسایا ۔ پھر اُن علاقوں کے موسموں کے مطابق اُن کیلئے خوراک کا بندو بست کیا۔ ریگستانوں اور پہاڑوں میں رہنے والوں کی خوراک میں گوشت کو شامل کیا اور میدانی علاقوں میں رہنے والوں کیلئے سبزیاں پیدا ہیں ۔ گوشت کا اچار بھی پہاڑوں میں رہنے والوں کی خوراک کا حصہ تھا۔
مغل جب افغانستان سے برصغیر میں داخل ہوئے اور انہوں نے ہندوستان میں اپنی حکومت بنائی – تو وہ اپنے کھانے اور اُن کی
ریسپی بھی ساتھ لائے۔ اسی طرح گوشت کا اچار بھی شاہی دستر خوان کی زینت بنا۔ آج سے پہلے نا کسی نے سنا ہوگا ۔ اور نہ ہی کھایا ہوگا۔ یہ ایسے یونیک ذائقے کی وجہ سے سب کھانوں سے منفرد ہے۔جسے گڑگانواں فوڈز نے اپ کیلئے محفوظ کیا۔
